Soft red winter wheat grows well in our Midatlantic climate.  This is a low protein wheat that is best suited to batter-style baking such as banana bread, pancakes, muffins, or anything that should have a soft, crumbly texture.  Grown right here in Bucks County, PA, we offer the soft wheat as 100% whole wheat and as a bolted "half-white" pastry flour with the coarsest bran sifted out.
